Tropical Delight - Light and Tasty Dessert
This simple, low fat, low sugar dessert is sure to please family and guests alike, and at just under 200 calories you won’t believe your taste buds.
Sponge cake dessert cups or sliced Angel Food cake
2 Cups of nonfat plain or vanilla yogurt
1 Package of Dream Whip®non-dairy topping mix
1 Package Jello®Brand sugar free orange jello
1 Can (small) crushed pineapple
Tub of whipped topping
In medium bowl, mix together yogurt and Dream Whip®mix with hand whisk or on the low setting of an electric mixer. Mix until light and fluffy then set aside in the refrigerator.
Drain the pineapple juice from the pineapple, setting aside a small amount.
Mix the orange Jello®with the pineapple juice to taste. (Use half of the Jello®mixture for a hint of orange flavoring or use all of the mix for a burst of orange)
Mix the Jello®and juice well until the Jello®is dissolved, and the mixture is smooth.
Mix the dissolved orange Jello®into the yogurt / Dream Whip®mixture. Mix well with the hand whisk or on the low setting of an electric mixer. This should remain light and fluffy.
Pour pineapple onto paper towels on a plate and blot as dry as possible. When the pineapple is quite dry, gently stir into the yogurt. Cool in the refrigerator for 45-minutes to an hour.
Spoon yogurt into dessert cups or over sliced Angel Food cake. Top with whipped topping and enjoy!
Variation of this dessert:
Use mandarin oranges in place of the pineapple. Be sure to drain and blot the fruit before adding to the yogurt.
