Tuna Pie with Rice Crust recipe

This is a easy, inexpensive tuna recipe. The recipe makes 8 servings.


2 2/3 cups cooked rice
3/4 cup scalded milk
1 1/2 tablespoons butter, melted
1/4 teaspoon salt
3 eggs
1/8 teaspoon pepper
1 can tuna
1/8 teaspoon nutmeg
1 3/4 cup grated swiss cheese


Combine cooked rice, melted butter and 1 slightly beaten egg. Turn into 9 inch pie plate and press mixture against side and bottom of pie plate, make sure you heap the rice high on the rim of the pie plate.

Heat oven to 400 degrees.

In bowl, flake drained tuna. Sprinkle 3/4 cup grated cheese onto crust, then top with half of tuna, then rest of cheese, heaping the cheese in the center of the pan.

Combine milk, 2 eggs, spices until well blended. Pour over cheese in pie plate. Sprinkle rest of tuna on top.

Bake for 35 minutes or until knife inserted in center comes out clean.
