Twice as Nice Coconut Valentine Cakes
Here's how you can make Two Valentine Desserts from One Cake Mix!
A 4" Heart shaped filled cake and a 10" round filled cake.
These delicious cakes have some very nutritious ingredients too!
You will need:
1 box of White Cake Mix ( I used Pillsbury Moist Supreme Classic White )
3 Large Eggs
2-1/2 cups Coconut Milk ( I used Silk Pure Coconut Milk)
1/3 cup melted Coconut Oil
Pineapple Choban Greek Yogurt
Instant Coconut Pudding
Coconut Flakes
Fresh Strawberries
Cool Whip at least an 8oz size
Pink or Red Gel or Pink Frosting
Red Food Coloring
4" Heart Cookie Cutter or 4" Heart Pattern
Follow package directions on Cake Mix for the whole egg recipe.
Mix cake mix together with 1 cup Coconut Milk, 1/3 cup melted Coconut Oil and 3 Large Eggs.
Pour into greased 10" Round Baking Pan. Bake at 350 degrees for 35 min or until tested done.
Cool.
While cake is cooling make the Instant Coconut Pudding according to package directions but using only 1-1/2 cups Coconut Milk so that it will be thicker. Refrigerate.
When cake is completely cooled:
Use Cookie Cutter or Heart Pattern to mark 4" Heart in center of cake. Carefully cut out heart, remove from middle of cake and set aside.
Now you have two cakes--a 4" mini cake and a 10' regular cake.
Carefully slice both cakes in half so you can add filling to each.
4" Mini Heart Cake is filled with Pinapple Greek Yogurt, Coconut flakes and Cool Whip.
Put halves together and frost top with Cool Whip. Sprinkle with red sugar and add a fresh strawberry to decorate.
Now you have a little Sweetheart Cake for two.
10" Round Cake is filled with Coconut Pudding, Cool Whip and chopped fresh strawberries.
Put halves together and frost entire cake with Cool Whip including inside of cut out heart shape.
Then fill the cut out with a mixture of fresh chopped strawberries and Cool Whip that has been tinted pink with a couple drops of red food coloring.
Decorate the outside border of the cake and cut out with pink frosting or gel. Write LOVE in center of filled cut out.
Cut some whole strawberries in half and use to decorate top. ( If you slice a V in the top of the whole strawberry and then slice in half it will look like a heart)
Now you have a beautiful 10" Valentine Cake to serve for family dinner or to take to a Valentine Party.
(You will also probably have some Coconut Pudding left over to enjoy as another dessert.)
