Vanilla Filmjolk Waffles

  • 3 eggs, separated
  • 1 3/4 cups vanilla filmjolk
  • 1/2 cup canola oil
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cups whole wheat pastry flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/6 cup light agave
  1. In mixer bowl with flat beater, mix egg yolks. Mix in filmjolk, oil, agave & vanilla. In large bowl, sift flour, baking powder & baking soda. Add to yolk mixture; mix until smooth. In small bowl, whisk egg whites to stiff peaks. Mix 1 cup egg whites into batter; mix in remaining egg whites.
  2. Prep waffle maker by heating and seasoning with olive oil if needed. Pour batter into each well of waffle maker; close lid. Cook until golden brown. Transfer to wire rack and cook remaining batter. Serve warm with optional melted butter and maple syrup.
