Hot Pasta Salad Vegan
Quick Hot Pasta and Garden Salad
An ideal light light lunch or dinner, fun and quick to make.
1 batch of Hand Made Pasta follow link for homemade pasta, use the vegan version if you so wish
1 fresh lemon
Extra Virgin Olive Oil about 50ml or to taste
Non-iodated sea salt and pepper to taste
About 20 leaves of fresh Basel
Several sprigs of fresh Italian parsley
150g of mushrooms
3 or 4 spring onions
½ red pepper
½ yellow pepper
Bunch of Cos lettuce leaves
Small Bok Choi (Chinese Cabbage)
4 baby marrows
6 cherry tomatoes
3 or 4 sprigs of rocket
Wash and dry all the vegetables ingredients then cut, shred or dice them according to your taste.
Add half of the olive oil and the all the fresh herbs to the assembled salad and mix it thoroughly. Place in a cool spot while you prepare the pasta.
Bring a deep pot of filtered to boil. Cook the pasta until it is cooked, do not drain the pasta.
With a slotted spoon transfer the hot pasta into the serving dish that contains the salad. Once all the pasta is transferred, mix in the rest of the oil with the pasta and salad, and place it on the table.
Add fresh lemon juice to taste if required. Or let each person add their own lemon juice and Olive oil.
