Willodean's Quick And Easy Mexican Casserole
Here is a quick and easy mexican casserole that will be loved by adults and children alike! Willodean, my former mother-in-law, passed on the recipe for this quick and easy dinner which became a fast hit with my children! They love it still today! It is great for unexpected company or for potluck dinners! Let's get started!
Let's Get Started
This recipe is made from supplies that you will often already have on hand. It is a favorite of all ages and once you have made it...it will be your favorite too! Begin by gathering together your supplies and ingredients. You will need a cast iron skillet, a 9 inch square casserole dish, a mixing bowl and cooking utensils. The ingredients you will need are:
- 1 pound ground hamburger
- 1/2 medium size onion, chopped
- 1 can of Cream of Chicken soup
- 1 can of Cream of Mushroom soup
- 1 can of mild chopped green chilies - 8 ounces
- 1 jar of mild taco sauce or chunky salsa - 8 ounces
- 1 package of shredded cheddar cheese - 8 ounces
- 1 package of Nacho Cheese flavored Doritos tortilla chips
Begin by preheating your oven to 350 degrees. Next saute the onions in an iron skillet. Add ground hamburger and brown completely, stirring occasionally to prevent burning.
While this is cooking, pour both cans of the soups into mixing bowl. Add the chopped green chiles and salsa. Set aside. Once meat is completely browned, drain grease into empty soup can. Add meat to soup mixture and stir in thoroughly.
Now you are ready to begin layering the casserole. Begin with a layer of the Doritos, covering the bottom of the dish as best as possible. Next spoon on half of the soup mixture being careful to smooth it evenly over the chips in the dish. Top this layer with a layer of the grated cheese. Go ahead...use half the bag...that is what it is for!! Repeat the layers, spreading evenly: chips, soup mix, cheese.
Now you are ready to bake. Bake at 350 degrees for 20 to 30 minutes or just until mixture is bubbly and cheese is melted and browning lightly. You are now ready to serve! This entire meal took only a short amount of time for prep and baking!
Serving Suggestions
This is wonderful to serve with a simple side of fresh veggies and dip or with whole kernel corn and a side salad. I have also been known to stir a can of drained whole kernel corn on into the soup mix and serve. It helped to speed things up on those evenings we had ball games to attend! I also would whip this up in the morning, store it in the refrigerator and then pop it into the oven just before heading out the door to a college class. It was easy for a sitter to serve and guaranteed the children would eat it without Mom's encouragement. Willodean's Quick And Easy Mexican Casserole remains a favorite with all to this day!
