Yemen Food Recipe - Stuffed Potatoes

Serves 6 People


6 Large Baking Potatoes — peeled

(for the stuffing)
1 Tablespoon Oil
1 Large Onion
1 Small Green Pepper
1/2 Cup Parsley
1 Teaspoon Dill
1/2 Teaspoon Turmeric
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1 Teaspoon Harrissa (note for authenticity you should use Zhoug but you will have to make it yourself)

(for the sauce)
1 Tin Tomato chopped
1 Tablespoon Olive Oil
1 Tablespoon Lemon Juice
1/2 Cup Green Olives
2 Cups Stock (chicken or vegetable if you are a vegetarian)
1/2 Teaspoon Salt
1/2 Teaspoon Turmeric


1) Cut each Potato into square shapes then scoop out the centre of each square.

2) In a large pan, saute the stuffing ingredients until the onion is well browned then allow to cool.

3) When stuffing is cooled, stuff the potatoes with the mixture

4) Bring all the sauce ingredients to the boil in a pot then cover and simmer for 20 minutes

5) In a preheated oven (400 degrees), put potatoes in a baking dish, pour over the sauce and bake for around 50 minutes or until the potatoes are soft.
