I love soup, especially soup with a tomato base and loads of flavor. This soup has tomato base, ground beef, black beans, and corn. It is spicy and absolutely delicious. This soup tastes marvelous topped with shredded cheese and Texas toast croutons or tortilla strips. I make this a vegetable soup to make it a self-sufficient meal that is hearty.

- 1 32 oz bottle vegetable juice
- 1 15 oz can tomato sauce
- 1 10 oz can tomatoes with green chilis
- 1 15 oz can black beans, drained half way
- 1 15 oz can white corn kernals, drained half way
- 1 15 oz can yellow corn kernals, drained half way
- 1 15 oz can mixed vegetables, drained half way
- 1 envelope dry ranch dressing mix
- 1 envelope taco seasoning
- 1 small onion, diced
- 1 lb ground beef
Directions
- Brown ground beef and diced onions in a medium skillet. Drain.
- Pour vegetable juice in a large stock pot. Add the ground beef mixture, beans, corn, tomato sauce, tomatoes, mixed veggies, and the dry seasonings.
- Bring to a slight boil, then reduce heat and simmer for about 25 minutes.
- Serve with soda crackers or tortilla strips. Also goes good with grilled cheese sandwiches.
