Artichoke Stuffed Mushrooms
I'm not a great cook but i do like cooking (somewhat), and I enjoy trying new recipes. However, I prefer easy recipes that don't require a lot of prep time or a bunch of ingredients that I don't normally have on hand, which is why I enjoyed making these Artichoke Stuffed Mushrooms. It's a pretty simple recipe. They turned out great. Actually, they were more than great, they were super delicious and I thought they tasted better than the ones I ate at the restaurant the week before.
You can serve theses Artichoke Stuffed Mushrooms as an appetizer or as a side dish, or you can just add a salad with them and serve for lunch. As pictured, I paired mine with a baked potato and a green salad and severed for lunch. I ate 5 stuffed mushrooms and I was stuffed! Below you will find my stuffed mushroom recipe and the photos I took of them. Enjoy!
Ingredients
- 1 tablespoon olive oil
- 1 chopped onion
- 24 large mushrooms with the stems removed and chopped
- Salt and pepper for taste
- 1 (12 ounce) jar of artichoke hearts drained and chopped
- 1 (8 ounce) pkg cream cheese softened
- 2 tablespoon sour cream
- 1 cup shredded Italian cheese blend
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon garlic salt
Instructions
- Preheat the oven to 350.
- 1. Spray a baking sheet with cooking spray.
- 2. Separate the stems from the mushroom caps; set the mushrooms aside and chop the stems into small pieces.
- 3. Chop the onion into small pieces.
- 4. Heat the olive oil in a skillet over medium heat; add the chopped mushroom stems and onion; season with salt and pepper and cook 5-7 minutes or until the onion is translucent. .
- 5. While the onion and mushroom stems are cooking, add the remaining ingredients (except for the 24 mushrooms) to a large bowl.
- 6. Add the cooked onions and mushrooms to the bowl; mix well.
- 7. Stuff the 24 mushroom caps with the mixture; place on the baking sheet.
- 8. Bake 20-25 minutes.

Remove the mushroom stems from the caps and chop them into small pieces
Saute chopped mushrooms stems and onion in oil
Mix ingredients in a large bowl and then stuff the mushroom caps with it
Stuffed and ready to go in the oven
