Avocado Corn Salad

A wonderful corn salad for lunch or as a quick meal. If you like, you can add bell peppers, onions or basil.

Yields: 1 serving


  • 1 avocado
  • sweet corns
  • tomato, chopped
  • peas
  • carrot, diced
  • one fourth dressing
  1. In a large bowl, combine the avocado, corns, peas, tomatoes, and carrots. Pour the dressing over the salad, ready, and serve.

      This recipe would be delicious with the sweet white corn that is coming in season now! Would be a great side dish for Fourth of July!
