Baked Potato Pizzas: A Healthy Dinner Your Whole Family Will Love
Twice baked potatoes mashed with veggies and topped with pizza sauce & melted cheese.
This inexpensive dinner requires little prep time and can be easily customized for those with dietary restrictions or picky eaters.
Ingredients
Serves 4, costs approx $7, dinner in an hour (majority of time is oven baking potatoes)
- 6 medium Russet baking potatoes
- 1/2 cup Trader Joe's frozen chopped spinach
- 1/2 cup Trader Joe's frozen broccoli florets
- 1-2 yellow onions
- 1 tablespoon Earth balance
- 1/2 cup Greek yogurt
- Trader Joe's pizza sauce
- Shredded mozzarella or other favorite cheese
Directions
- Preheat oven to 450°
- Bake potatoes for 45-60 min or until you can easily stick a fork in them
- Slice, sauté & carmelize onions with a sprinkle of sugar (place lid on pan until onions are cooked)
- Lightly steam 1/2 cup broccoli florets & 1/2 cup spinach, drain well
- Let potatoes cool until they are not too hot to handle
- Slice in half the long way
- Scoop out inside of potato with spoon into large bowl
- Place potato skins back on cookie sheet
- In bowl mix in cooked spinach, broccoli & carmelized onions
- Add 1 tablespoon earth balance & 1/2 cup Greek yogurt
- Mix all ingredients
- Scoop mashed potatoes & veggies back into potato skins
- Top with 1-2 tablespoons pizza sauce & shredded cheese
- Place back in hot oven to melt cheese until lightly browned
