A Delicious Picnic Salad
Three bean salad is a combination of tangy and sweet. It combines a generous portion of healthy protein filled beans with a delicious dressing. It is full of flavor, color, and fiber. This salad is easy to make, tastes great, and feeds several people. It makes a perfect dish to bring on a picnic or to a covered dish gathering. The longer it sits in the refrigerator, the more the flavors blend and enhance each other. It can be kept for about a week in the refrigerator. Great accompaniment for grilled pork chops or chicken.

Ingredients
- 2 cans green beans, french style
- 2 cans wax beans
- 2 cans other beans (I use kidney beans.), (Can use lima, chick peas, northern, or butter)
- 1 medium onion, finely chopped
- 1 medium green bell pepper, finely chopped
- 1 small jar pimientos
- 1/2 cup oil, olive, canola, or vegetable
- 2/3 cup balsamic vinegar
- 1/2 cup white sugar
- 1 tsp salt
- 1/2 tsp pepper, course ground
Directions
- Mix all the vegetables together in a large bowl with a lid.
- In a small bowl with a lid or a large jar, mix oil, vinegar, sugar, salt, and pepper. Mix together well. Pour over the vegetable mixture.
- Chill for at least two hours but it is better if it chills overnight. Delicious! Enjoy!
