BBQ Side Dishes: Hot Off the Grill Barbecue Ideas

Sizzling BBQ Side Dish Ideas

While salads and cole slaw are popular sides to barbecue fare . . . . there are a number of hot-off-the-grill bbq side dishes you don't want to miss.

Yeah, yeah . . . grilling usually conjures up visions of burgers, ribs and chicken . . . however, it's a versatile and healthy way to cook all kinds of food. The fat simply drips away, leaving you with succulent grill flavors to enjoy.

So, if you like the taste of grilled food, here are a few ideas for tasty BBQ side dishes that you can create right on the grill . . .

Grilled Corn On the Cob With Herb Butter - A Favorite BBQ Side Dish

Grill Roasted Corn On the Cob With Herb Butter

  • Serves 8
  • 8 corn cobs with husks
  • 8 ounces of butter (softened)
  • 2 tablespoons chopped fresh parley
  • 2 tablespoons chopped fresh chives
  • 2 tablesppons chopped fresh thyme
  • Grated rind fo 1 lemon
  • Salt & Pepper to taste

Herb Butter:

Add the chopped herbs, lemon rind, salt and pepper to the softened butter and mix well.

Grilled Corn:

Preheat your barbecue grill.

Prepare the corn cobs, peel back the husks and remove the silk. Fold the husks back around the kernels and secure them in place with string, if necessary.

Blanch the corn cobs in a large pan of boiling water for about 5 - 7 minutes, Remove with a slotted spoon and drain thoroughly. Place the corn in husks on a medium hot grill and cook for 20 to 30 minutes, turning frequently.

Transfer the corn cobs to serving platters, remove string anf pull back husks. Serve each with a generous portion of herb butter.

Grilled "Not-So-Common" Garden Variety - A Simple BBQ Side Dish . . .

Go to your local Farmer's Market and snatch up an assortment of fresh veggies. And don't be shy about experimenting. You can grill sweet potato, celery root, beet roots, portabella mushrooms . . . you get the picture.

  • Wash thoroughly . . .
  • Cut into chunks (or you can leave small vegatables whole) . . .
  • Drizzle with olive oil and season with a dash of salt and pepper . . .
  • Grill until done!

Here's a Creamy Pesto Dip that wil add a "kick" to grilled veggies (serves 8):

  • 8 tablespoons fresh basil leaves
  • 2 tablespoons pine nuts
  • 2 cloves of fresh garlic
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 2 pinches of coarse sea salt
  • 1 1/3 cup of strained plain yogurt

Place the basil, pine nuts, garlic and sea salt in a mortar and pound into a paste with a pestle. Gradually work in the parmesan cheese, then gradually stir in the oil. Place the yogurt in a small serving bowl and stir in 6 to 8 tablespoons of the pesto mixture. Cover with plastic wrap and let chill in the fridge until you're ready to serve the grilled vegetables.

You can store any leftover pesto mixture in a scew-top jar in the refrigerator for future use.

Grilled Fresh Pineapple - Another Sweet BBQ Side Dish

That's right . . . fresh pineapple is a great addition to the grill. Grilling will concentrate juices for a sweeter, smoky flavor.

TIP: Begin by slicing your pineapples (or cutting into wedges). Once the grill is hot, place them on the grate. Watch to be sure that they don't burn or dry out. When you see grill marks appearing, remove them promptly.

Kabob It!

You can put just about anything on a kabob and season it to taste good right off the grill.

Skewers Needed To Make Great Kabobs - Metal . . . Wooden . . . Bamboo

TIP: If you're using wooden skewers, soak them in water for about thirty minutes so they won't burn.

Add your vegetable chunks and place on grill. Note: If you want to cover kabobs in a succulent teriyaki or barbecue glaze, wait until they are about done cooking and then place on a piece of foil so the marinade can caramelize.

      These side dishes sound delicious! I love to bbq but we usually just go easy with mashed potatoes, corn cobs, stuffed jalapeno peppers, and beans. I will definitely be trying out some of these sides soon ;)
