Bean sprouts salad recipes
We grow bean sprouts almost every week and enjoy it every week, this is one of our favourite dish, very soothing ingredients. I hope you will enjoy it too.

SERVES 4–6
INGREDIENTS
FOR THE DRESSING:
Round 1
1/4 cup sugar
1/4 cup rice vinegar/ apple vinegar 5%
1/4 cup good fish sauce
3/4 cup water
Round 2
1 tbsp. lemon/lime juice
1 tbsp. sugar
1 tbsp. fish sauce
1-3 cloves garlic, chopped
1/2 bird eyes chilli, deseeded and sliced
FOR THE SALAD:
1 lb. bean sprout, washed and drained
1/2 cucumber, sliced (optional)
1 small carrot (optional)
1/2 medium onion, thinly sliced
FOR GARNISHING:
1 oz. toasted and crushed peanut
1/2 cup chopped Thai basil or sawtooth herb
INSTRUCTIONS
In a large bowl, make the round 1 dressing: whisk together vinegar, sugar, add fish sauce and finally water.
Add to the bowl the salad ingredients and toss to combine. Leave 30 minutes to set, turning 2 or 3 times to dress evenly.
Before serving, make the round 2nd dressing, similar to the 1st but add garlic and chilli, pour to the salad bowl, toss to combine, add the garnishing herbs and transfer to serving platter. Sprinkle with crushed peanut.
