Bean sprouts salad recipes

We grow bean sprouts almost every week and enjoy it every week, this is one of our favourite dish, very soothing ingredients. I hope you will enjoy it too.

Round 1
1/4 cup sugar
1/4 cup rice vinegar/ apple vinegar 5%
1/4 cup good fish sauce
3/4 cup water
Round 2
1 tbsp. lemon/lime juice
1 tbsp. sugar
1 tbsp. fish sauce
1-3 cloves garlic, chopped
1/2 bird eyes chilli, deseeded and sliced

1 lb. bean sprout, washed and drained
1/2 cucumber, sliced (optional)
1 small carrot (optional)
1/2 medium onion, thinly sliced

1 oz. toasted and crushed peanut
1/2 cup chopped Thai basil or sawtooth herb


In a large bowl, make the round 1 dressing: whisk together vinegar, sugar, add fish sauce and finally water.

Add to the bowl the salad ingredients and toss to combine. Leave 30 minutes to set, turning 2 or 3 times to dress evenly.

Before serving, make the round 2nd dressing, similar to the 1st but add garlic and chilli, pour to the salad bowl, toss to combine, add the garnishing herbs and transfer to serving platter. Sprinkle with crushed peanut.

      Yum! That is a great idea. Using palm sugar was a very thoughtful suggestion. This sounds like a great recipe for a vegetarian. I have not tried olive oil and lime juice, but I am going to this weekend. Thanks for the idea!

      Lohrainne, thank you for your comment, you might want to replace fish sauce with salt or use the soy sauce instead. Or you might just want to mix it with olive oil, lime juice, palm sugar and salt, then mix with chopped herb before serving. Bean sprouts goes well with soup and make a good stir-fried dish too, I believe you will make a great dish.

      It looks really delicious. I would have to modify some of the ingredients because I am vegetarian. But, we are starting to get into bean sprouts so will have to try this recipe. Thanks!
