Rich Chocolate Raspberry Cheesecake

Rich, creamy, mouth watering, sinfully delightful, chocolate raspberry cheesecake. A pleasure for a chocoholic's taste buds. Slowly savor this guilt ridden desirable dessert of ecstasy. Blend together raspberries, chocolate and cream cheese for pure delight.

Raspberries are healthy, delicious and packed with vitamin C. Dark chocolate is full of flavonoids, which act as antioxidants. Cream cheese is a dairy product with vitamin D and calcium. Though high in fat and calories a light cream cheese or cottage cheese are both alternates to this savoring recipe.

Before you get started, make sure you have the right utensils.

Rich with the best ingredients for the perfect comfort dessert.

Ingredients:

1 1/2 cup cream filled chocolate cookie crumbs (18 cookies, crushed)

2 Tablespoon melted butter

32 oz softened cream cheese

1 1/4 cup sugar

3 large eggs

1 cup sour cream

1 teaspoons vanilla

6 oz semi-sweet chocolate chips

1/3 c strained raspberry preserves

Topping Ingredients:

6 oz semi-sweet chocolate chips

1/4 cup whipping cream

Directions:

1. Finely crush cookies.

2. Melt 6 oz of chocolate chips and cool slightly.

3. Combine cookie crumbs and butter.

4. Press onto bottom of 9-inch springform pan.

5. Combine 24 oz of cream cheese and sugar. Mixing at medium speed on electric

mixer until well blended.

6. Add eggs, one at a time, beating well after each addition.

7. Blend in sour cream and vanilla; pour over crust.

8. Combine remaining 8 oz cream cheese and melted chocolate, mixing at medium speed on electric mixer until well blended.

9. Add raspberry preserves and mix well.

10. Drop rounded measuring tablespoonfuls of chocolate cream cheese batter over plain cream cheese batter, do not swirl.

11. Bake at 325 degrees F., 1 hour and 25 minutes. Loosen cake from rim of

pan; cool before removing rim of pan.

Topping Directions:

1. Melt chocolate pieces and whipping cream over low heat stirring until smooth.

Spread over cheesecake. Chill.

2. Garnish with additional whipping cream and raspberries.
