Coffee Mocha Fruit Cake Dessert Recipe. Have you ever wanted to make a cake with coffee and chocolate that would knock your socks off and have guests begging for your secret? Coffee Mocha Fruit Cake
Recipe
Coffee Mocha Fruit Cake - and Drizzle Frosting
1 box prepackage chocolate cake mix
2 cups Strong brewed Coffee
Follow direction on the box of cake mix substituting water for strong brewed coffee
1 cup chopped mixed dry fruit (raisons, dates, currents, figs, prunes or other desired dry fruit)
1/3 cup dark rum
Mix dried fruit with rum microwave 1 minute, left set for 5 minutes. .
1/2 cup chopped nuts (almonds, or walnuts) Pour into cake batter with rum and fruit mixture and stir until evenly blended,
Pour mixture into a well greased and floured bundt pan, bake at recommended temperature on box of cake mix until done. The cake will pull away from the sides of the pan when it is done. Cool for 5-10 minutes and turn out onto a cake plate.
Drizzle Frosting
1 4 ounce package of softened cream cheese
3/4 cup confectioners sugar
1/2 teaspoon. vanilla extract
2-4 tablespoons water or strong brewed coffee
OPTIONAL: 1 tablespoon cocoa powder-add into mixture before adding water stir in thoroughly.
Mix the cream cheese, sugar and vanilla extract together in a small bowl until smooth. Slowly add water or coffee until mixture becomes thinned. It should be a consistency thinner than that of regular frosting. Drizzle along the top edge of the cake while it is still warm and allow it to drip down the sides of the cake. Cool and serve.
For added decoration cut salad cherries in halves and place onto the frosted top of the cake as decoration,

-1 bag or can of finely ground dark roasted coffee
-water
Make your coffee as usual, using finely ground dark roasted coffee. Use your regular coffee maker. The fine grounds will make a very strong pot of coffee.
Frothed Milk
-1/2 cup ice cold water
-1/2 cup instant milk powder
Place water and milk powder into a small chilled metal bowl, with an electric mixer beat until fluffy. Pour coffee into a cup about 3/4 of the way full, then spoon whipped milk onto the top of the hot coffee. Sweeten if desired and enjoy capuccino at home.
