Cream of Cheddar Broccoli Soup Recipe
So many parents have a hard time getting their children to consume the proper amount of fruits and veggies into their diets, but adding something as little as some good-for-you cheese can make the world of difference.
If I were to have tried feeding my kids just plain old broccoli soup, I know I would have heard nothing but moaning and groaning, but adding cheese into the title (and recipe), and they think, "well I love cheese, this should be okay". After their bowls were empty, each one admitted how good the soup was even though it was broccoli soup. Sometimes I will make some homemade biscuits to go with the soup too, and the kids love those as well.
I do have a homemade recipe that I have used for the cream base for my soup as well, but using a pre-done base makes this meal so much easier, quicker, and less dishes (which is a plus for most households).

Cook Time
Prep Time: 10-20 minutes
Total Time: 30-60 minutes
Serves: 3-6
Ingredients
- 1 pkg Knorr Broccoli Soup Mix
- 2 cups water
- 2 cups milk
- 1 full stalk of fresh broccoli
- cheddar cheese
Instructions
- Empty packet into a pot
- Pour in 2 cups water
- Add 2 cups milk
- (whisk this together so there are no clumps)
- Turn your soup on medium heat and start dicing your broccoli, gradually adding it in as you cut
- Grate your cheddar cheese while your soup cooks
- Cook it until your broccoli is almost at your preferred texture (I put mine on a low simmer). You need to stir it quite often to stop it from sticking or burning to the bottom.
- Add your grated cheddar cheese. When melted, it is ready to eat.

Whisking is the best way to stir soup making sure not to allow any nasty clumps to form in your delicious, creamy soup.
Finding a durable whisk with non slip handles will not only help with slipping, but won't heat up and burn you when you have come back to stir something.
