Curry Dishes Come From Around The World

Did you know that curry isn't just limited to Indian dishes, but can be found in various cuisines around the world? Vietnamase, Burmese, Laos, Cambodian, Caribbean, Jamaican, South African, British, Pakistani, Bangladeshi, Japanese, Chinese, Indonesian, Malaysian, and Thai cuisines, in addition to many others, all have curry dishes.

Spices Used In Curry

Although most people think of curry powder, turmeric, and cumin as being the spices associated with curry, not all curry dishes include them. For example, curry dishes in North East India often don't contain those particular spices. In fact, almost any dish with a spicy sauce and one or more vegetables and/or meats can be considered a curry, no matter which spices it uses.

Curried Fruit

This was one of my favorite dishes as a child!

1 29 oz can peaches, drained

1 29 oz can pears, drained

1 20 oz can pineapple slices, drained

10 to 12 maraschino cherries, drained

1 1/4 cup packed light brown sugar

1 Tablespoons curry powder

1/3 cup butter or margarine

Place the well drained peaches, pears, and pineapple in large casserole dish. Add a maraschino cherry to the center of each pineapple slice. In a small pot or saucepan, combine the brown sugar, curry powder, and butter or margarine. Cook over low heat, stirring constantly, until the butter is melted. Place the brown sugar mixture over the fruit. Bake for 35 minutes at 350 degrees F.

Curry Beans

2 cans Great Northern Beans, rinsed

1 carrot

1/2 onion, chopped

1 apple, peeled and chopped in thin pieces

1/4 cup raisins

1/2 cup honey (or liquid sweetener of your choice)

1 TBSP ketchup

1/4 cut water

1/2 tsp curry powder

1/4 tsp salt

sprinkle of pepper (to taste)

Saute carrot and onion in a little oil until tender. Place apple pieces into a casserole dish and and cook in the oven at 350 for about 5 minutes, or until tender, while you are rinsing and straining the beans. When the apple pieces are tender (test them by poking them gently with a fork), add the carrots, onions, rinsed beans, and all the other ingredients to the casserole dish and bake at 350 for 30 minutes. Serves 2 as a main dish.

Vegetable Curry

1 potato, peeled and diced

1 carrot, peeled

1 zucchini

1/2 large red onion

1/2 to 1 tsp curry powder (or even more, depending upon taste)

1/2 teaspoon ground turmeric

salt to taste

pepper to taste

1/3 to 1/2 cup of water (plus additional water for steaming veggies)

Place diced potatoes in a steamer basket inside a pot of water on the stove, cover, and bring the water to a boil. While they are steaming, peel and cut the carrot into thin slices. Add the carrot to the steamer basket and continue steaming. Cut the zuccinni into sticks and add it to the steamer basket on top of the other veggies. Steam all of these vegetables until tender (especially the potatoes). While they are finishing steaming, slice an onion and saute it in a small amount of oil in a skillet. When the potatoes and other veggies are tender, add them along with the water, salt, pepper, curry powder and turmeric to the skillet. Simmer a few minutes on low. Taste, and add more seasonings if needed. If the veggies are too dry, add a little additional water.

      Hmm... I come from 'THE' curry country and well, curried fruit is new to me! Kashmir is one part of India which I know of, where they use a lot of dry fruits and nuts in the curries! Enjoyed the treats here! :)

      You've succeeded in making me very hungry. I use a lot of turmeric, cumin, corriander and cayenne...but I've never used mustard seed. And I never even knew there was a "curry leaf" until I watched the video on Curried Summer Squash. I'm guessing I can find that curry leaf at an Indian store. Gotta remember to pick some up. Thumbs up for a very enjoyable lens!
