I love a chilli con carne or a chili con carne (depending on where I am) if I'm in Spain a chile con carne! But wherever I am, it's not the spelling that matters it's the taste of the dish. In fact I love a chilli so much that I make a huge big saucepan of it, and while I do freeze leftover portions my favorite thing to do with leftover chilli, is to make chilli con carne wraps.
I like to serve my chilli con carne or chilli beef wraps (as my daughter calls them) with green salad leaves, a fresh tomato salsa, Greek yogurt with a twist, grated red cheddar cheese (or mild cheddar if you prefer) and spicy tortilla chips. This is a real family pleasing meal and ideal for a summer supper or a weekend lunch.
This dish is a popular Saturday night movie treat with my family instead of an expensive take-out, we have an inexpensive make-in and a lot healthier too. Lay everything out and let the family help themselves, even the little ones will enjoy the fun. And for me the best part is no cooking and only a few things to wash up, yippee!

While you're heating up your chili con carne, make your tomato salsa and add a twist to your Greek yogurt.
- Easy Chili Con Carne Recipe With Sweet Corn Salsa
Chili con carne with mince meat, herbs and sweet corn salsa, served over rice and only using two pots. What's not to like?

Ingredients
For the tomato salsa:
- 2 beef tomatoes, chopped
- 1 small red onion, chopped
- 2 tablespoons fresh lemon juice
- 2 tablespoons sweetcorn
- Sprinkle fine sugar
- Sprinkle fine salt
For the Greek yogurt:
- Handfull fresh chives, snipped
- 1 garlic clove, minced (optional)
- Sprinkle red chilli flakes, diced
For the filling:
- 250grams leftover chilli con carne
To Serve:
- 8 flat breads
- 1 bunch lettuce leaves, shredded
- 100grams mild or red cheddar cheese, grated
Instructions
- In a large bowl mix all the ingredients together throughly coating the tomato, onion and sweetcorn eveningly with the lemon juice, sugar and salt mixture.
- Place in the fridge to chill for five to ten minutes while warming up your leftover chilli con carne.
- Mix the snipped chives and minced garlic throught the Greek yogurt and build your chilli wrap.
- Place your flat bread on a large plate and add shredded lettuce leaves.
- Spoon over the chilli con carne and top with a few dollops of the Greek yogurt.
- Next up is the tomato salsa followed by a good sprinkling of grated cheddar cheese (mild or red cheddar). Roll, fold and enjoy.
