Darline loves to bake goodies with recipe's passed down from her grandmother and mother.

Ah, the legendary Crazy Cake. My grandmother has been making this eggless chocolate cake for as long as I can remember. It’s a family tradition, passed down from generation to generation. And now, it’s my turn to carry on the legacy.

My grandmother always said that the key to a delicious Crazy Cake is to have fun while making it. Hence the name, I suppose. She would dance around the kitchen, singing and laughing as she threw the ingredients together in a whirlwind of flour and cocoa powder. It was like watching a baking tornado, but the end result was always worth it.

The best part about Crazy Cake is that it’s so easy to make. No need to separate eggs or worry about getting the measurements just right. Just throw everything into a bowl, mix it up, and pop it in the oven. It’s foolproof, which is perfect for someone like me who tends to be a bit... clumsy in the kitchen.

One of the things I love most about Crazy Cake is that it’s completely customizable. Want to add some chocolate chips? Go for it. Craving a hint of coffee flavor? Add a splash of espresso. The possibilities are endless, and that’s what makes it so exciting to bake.

As I gathered the ingredients for my own Crazy Cake adventure, I couldn’t help but feel a sense of nostalgia. The familiar scent of cocoa filled the air, bringing back memories of lazy Sundays spent in my grandmother’s kitchen. I could almost hear her voice, guiding me through the steps with a mischievous twinkle in her eye.

I followed the recipe to a T, just as my grandmother had taught me. Mixing the dry ingredients together, creating a well in the center, and pouring in the wet ingredients. It was like a dance, each step leading to the next with perfect harmony.

As the cake baked in the oven, I couldn’t contain my excitement. The sweet aroma wafting through the house made my mouth water in anticipation. I knew that soon, I would be sinking my teeth into a slice of nostalgia, a taste of my childhood wrapped in cocoa goodness.

When the timer finally dinged, I rushed to the oven and pulled out the cake. It looked perfect, with a slight crack in the middle and a rich, dark color. I couldn’t wait to dig in.

As I sliced into the cake, I could see that it was moist and tender, just like my grandmother’s version. The first bite was like a burst of happiness in my mouth, a rush of chocolatey goodness that made me close my eyes in bliss. Crazy Cake had struck again, bringing joy and satisfaction in every bite.

I shared the cake with my friends and family, who all marveled at its deliciousness. They couldn’t believe that such a simple recipe could produce such a decadent treat. But that’s the magic of Crazy Cake – it’s easy, it’s quick, and it’s absolutely delicious.

So here’s to you, Crazy Cake. Thank you for bringing so much joy and laughter into my life. You may be eggless and dairy-free, but you’re full of flavor and love. And now, I will continue to make you for years to come, passing down the tradition to the next generation. Just like my grandmother did for me.

Eggless Chocolate Cake AKA Crazy Cake

Prep 10 mins

Cook 45-60 mins

350 degrees

Utensils:

13”×9” nonstick pan

Spoon or Spatula

Measuring cups and spoons

Dry Ingredients:

½ Cup Unsweetened Cocoa Powder

1 teaspoon Salt

2 teaspoons Baking Soda

3 Cups Flour

2 Cups Sugar

Wet Ingrediency:

2 teaspoons Vanilla

⅔ Cup Cooking Oil

2 Cups Water

1 Tablespoon Vinegar

Preheat oven to 350 degrees Fahrenheit, and gather all ingredients.

First add all of the dry ingredients (flour, sugar, baking soda, cocoa powder, and salt) directly into the 13”×9” pan… Mix together making sure to get all of the corners mix as well.

Then make 3 craters in the dry mixture. In the first crater place the vanilla. In the second crater place cooking oil. And then in the third crater place the vinegar. Next pour the water over all 3 craters.

Mix together until smooth, again making sure to get all of those corners.

Lastly, put the pan in the oven for 45-60 mins or until a toothpick or knife comes out clean from the center.

Once the Eggless Chocolate Cake AKA Crazy Cake is cooled down, you can add a icing or frosting to the cake. We normally just have it with no frosting or we will add a little powdered sugar on top.

I hope you love this Eggless Chocolate Cake AKA Crazy Cake as much as we do. The best part is there is next to no clean up!
