Have you any more frugal breakfast recipes?
Healthy if possible but definitely frugal.
Use what you've got! Take a muffin pan and spray with Pam or other non stick spray. Preheat your oven to 350 degrees. Now take some eggs, figure 1 per person you'll be serving and break into a large bowl and wisk. Add salt & pepper to taste. Add a pinch of your favorite herbs. I like a small touch of dill and some onion powder. Take croutons, either ready made or make your own ( so much better) and toss a bunch into the eggs. If you have some cheese, and even some bacon, cut it up small and toss that in too. Mix it all together and spoon some into each of the greased muffin cups. Bake for 30-40 minutes until a knife comes out clean when inserted. Turn out your little mini breakfast muffins and serve with a piece of melon or some other fruit or toast and jam. This is even a great breakfast item for company!
