What is bread flour as opposed to rye or wheat flour?
As per the 4 steps to making sourdough starter.
Flour can be made out of a variety of grains. Oats, wheat, rye, barley, etc. There are different types of four made with wheat. White flour, all-purpose flour, bread flour, cake flour and whole wheat are all types of wheat flour. The difference in the types of wheat flour are basically the type of wheat and the grind of the flour. Bread flour is a flour that gives a nicer "rise" to breads.
In addition to datadolls response also; if you choose the white bread flour it is the least healthies of the flours. White bread flour normally consist of high starches, sugars and also bleach. When choosing your flour of choice I suggest to always go for the healthiest, like whole grain wheat or rye. It will cost you a little more but your body will love you for it.
