    The soffritto of cow heart (cuore di bue, not be confused with the namesake tomato) is not a typical Piedmont's recipe. Nonetheless, the dish is prepared by adding cow heart and cow liver, finely minced, to the traditional soffritto. Cook and serve with "pasta".  When cut in larger pieces the heart and liver are cooked in soffritto, are served as "secondo" with veggies or potatoes.
