    Does anyone out there make their own mayonnaise?

    I am going to try just to see what it is like.  Anyone out there willing to share experiences with doing this?

    I have numerous times. It is a little tricky the first couple of times you whip up those egg whites and oil but it is well worth the effort.

    Mayo is the mother sauce of the cold foods, if you look up Garde Mange techniques you can discover quite a few uses for home made mayo. Garde Mange is a French term for cold food and covers quite a bit.

    Mayonnaise is the base for many salad dressings and homemade is much more delicious than store bought. The trick is making an emulsion of the egg yolk, lemon and oil. Alton Brown on the Food Network has a great recipe.
