Would like to start a baking course locally, during the evenings...

... does anybody have any ideas where I might get started, no problem with the baking but where would I start and where could I physically do the course?

Any other ideas? Should it be a one off course for beginners or aimed at a regular crowd? What prices would you do it for? (I've seen wildly different prices in similar areas - there are no similar courses near my location)

It depends what country you are in. I can only speak for the UK. Most evening courses of this type are run by or in technical colleges (tech). Some technical colleges run outreach courses in villages that don't have a tech. If you want to teach baking, then you need to have access to ovens or similar, which you might find in a tech. The tech might be willing to run the course and pay you as a tutor.
Alternatively, you could run courses on a demonstration basis. You might be able to find a local bakery that would be willing to allow you to use its ovens and that has enough space for seating an audience. You could sell it to the bakery as good publicity for them.
If this is not possible, then maybe a local community centre might have a kitchen you could hire? Or maybe you could hire a portable oven. In both cases, this would have to be a demonstration. You could probably give handouts of recipes and other cooking ideas.
In terms of cost, you really need to be able to make about £30 an hour (about $50 US). This is AFTER you have paid for the hire of any equipment and rooms. To calculate your charge, add your required fee to any other costs and divide by the number of people you hope can attend. So if it will take you 2 hours for the demonstration (£60) and cost you £20 to hire equipment and a room, your costs will be £80. If 10 people turn up, that will be £8 per person, which is a bit high. You may need a fall back situation of running it only if the numbers are there and making it £6 per person. That would require a paying audience of about 14 people.
