    What is your favorite recipe using spring vegetables?

    If you buy vegetables grown locally, they tend to taste better; but, you have to pay attention to which season you are in,   Just want to find out what people like to fix, or even a favorite fruit or vegetable..

    Chard is in season now and we love it sauteed in a little olive oil, butter and garlic. The first fruits I look forward to in the spring are figs and mangoes. The figs are especially large and sweet this year. Living in Peru has its advantages since there are many micro climates and thus a large variety of produce.

      Nice.  A number of chefs have told me that Peru is a great place for food.   There is a fig bush in my back yard, so I know what you mean about the figs.

    We like Glazed Carrots and Parsnips. They are cooked in Maple Syrup and are sooooo good!

    Very Simple; Veggies grown in my garden, such as cucumbers, carrots, bell peppers, and cherry tomatoes, all used in a yummy salad! smile

      That is as fresh as veggies get.  They do taste much better that way.

    I like to eat many dishes of spring season but i love Parmesan Spring Chicken.

      Cool. You included a photo.  I think I see potatoes, peas, and spinach under that good looking chicken.

    Asparagus sauteed in garlic butter , with crispy bacon wrapped around the asparagus :-) yum yum
    Tastes great , not so good for the heart , lol

      Yes that is very tasty dish.  I prefer asparagus with hollandaise sauce, which isn't good for the heart either.   I just tell myself it's good for my soul, in moderation.  I wonder how hollandaise sauce on the bacon wrapped asparagus would taste.

    My grandmother's stew was a definite staple of the garden vegetables that she had canned in the late summer. What a great fall meal.

      Canning vegetables.  That is a whole subject in itself.  Did she store the vegetables in mason jars?  I had an aunt who did that with tomatoes she grew.  She had a very colorful pantry.
