How do we REALLY know if foods are Organic and non-GMO?

As an example: TOFU is made by soybeans, which are good for you, oh wait, they are not, because 96% of all Soybeans grown in America are GMOs which are known to cause higher plant estrogen levels which can be dangerous and pose long term health risks. Tumors, Cancer, Birth Defects!
How do we know what to trust, what to eat, and what the risks are?

If you want foods that are non-GMO, look for items tagged with the Non-GMO Project logo. They are a non-profit organization dedicated to building a non-GMO food supply, and they screen products and the ingredients in them before approving the use of their logo. I rarely purchase anything with soy or corn in it that doesn't bear their logo.
