Mom's Vegetable Soup Recipe

Mom and Dad hadn't been married long when Mom had just started perfecting her famous all day vegetable soup. When Dad got home from the base, the house smelled wonderful, the table was set, and he took his seat. Mom went into the kitchen to bring out the big bowl of soup. On her way to the dining room, she slipped on the floor and went sliding about 10 feet down the hall, into the dining room, landing at his feet, partway under the table. She was still holding the bowl of soup, and she looked up to him for help. And my Dad, being my dad, got up, and then stood over her like an umpire and pronounced her, "Safe!" She didn't find it particularly amusing then, but we certainly laugh about it now. One thing I've always loved about my family is their sense of humor.

Piece of beef (Left over from a roast will do.)

4 carrots, sliced

1 large onion, chopped

3 potatoes, cubed

2 stalks celery, sliced

1 small can tomato paste

3 ears of corn, with corn cut off

1 cup fresh peas

1 cup fresh green beans

1 cup chopped cabbage

dash or two of garlic powder

salt and pepper

water to fill up pot

We always knew fall was on the way when Mom started cooking her homemade vegetable soup, using the veggies she and Dad grew in their garden.

Put all ingredients in a large pot or crock pot. Start the soup around lunch time and simmer it all afternoon until everything is tender and the house smells divine.

      When I can, which is not that often, I love to whip up a pot of home made chicken noodle or other vegetable soup. Made several pots out of back yard veggies last summer and hope to do the same this year too! Great lens work soup crafter!

      Homemade is tops, but I make the soup in our house (LOL). Tho' i must admit to getting lots of good ideas from the establishments that we vivsit from time to time. On a day out when its chilly a bowl of soup is always welcome and we usually get around to a small alcoholic beverage too.

      Homemade is always best! My Mum didn't make a lot of soup, but my wife does, and it's thick, warming, filling and so tasty - and good for you too. We eat a lot of fresh vegetables, and it makes a world of difference to the taste.

      My recipes usually start with a can of something and then all of my ingredients and extra vegetables get added in. It's still a lot of work but it generally takes care of the sauce part of things.

      Sounds easy and delicious, and I LOVE the family story! :) I, too, still make some of my mom's favorite recipes, such as rugelach, thimble cookies, brisket and flanken soup.

      I'm still waiting for the day when both my children will eat a soup like that without complaining about this and that. One doesn't like peas, the other one just hates celery etc:) Till that day comes this is just for me and my hubby:) Great recipe, thanks!
