When I first made this Hershey's Chocolate Chip Applesauce Coffee Cake it was a cold, rainy fall day. You know, the kind of day where you just want to stay at home and watch an old movie while curled up in front of the fireplace.

We had decided to have homemade chili that day and do some baking. The smells of chocolate and cinnamon from the cake overtook all our senses as we anxiously anticipated it's coming out of the oven. A piping hot cup of coffee or tea and spicey homemade  coffee cake just hit the spot on this autumn afternoon.

I've shared my own Hershey recipe here along with some wonderful materials I've researched for the chocolate lover. Not only will you gain great chocloate baking recipes and ideas, but I've provided valuable information or using chocolate in the classroom and points of interests for a Hershey chocolate family vacation. It's all wrapped up in a big Hershey Kiss, just for you.

Preheat Oven 350 degrees

Baking Items: 13x9x2 inch baking pan lightly greased or Bundt pan greased and lightly floured, large mixing bowl, small mixing bowl, electric mixer, spoon

  • Prep time: 15 min
  • Cook time: 30 min
  • Ready in: 45 min
  • Yields: 12 to 15

Ingredients

  • 1 cup (2 sticks) soft butter or margarine
  • 1 cup granulated sugar
  • 2 eggs room temperature
  • 1 tsp. vanilla
  • 3/4 cup natural applesauce
  • 2 and 1/2 cups all-purpose flour
  • 1 tsp. baking soda and 1/2 tsp. salt
  • 6 or 8 ounces of Hershey's chocolate chips
  • 3/4 cup chopped walnuts (or pecans) optional
  • 1 or 2 tbsp. warm water

Instructions

  1. Optional Filling: 1/8 cup cinnamon & 1 stick of butter melted. This is a dry, spicey cake that needs frosting if making it with the cinnamon filling. But oh so good!
  2. 1. In a small bowl, combine butter and sugar using electric mixer on medium setting.
  3. 2. Add eggs, vanilla and applesauce to wet mixture.
  4. 3. In large bowl, stir dry ingredients: flour, salt, baking soda
  5. 4. Slowly add wet mixture into the dry mix until well blended.
  6. 5. Add chocolate chips and nuts. Stir gently. Spread batter into pan.
  7. 6. For 13 x 9 x 2 pan, bake at 350 for 30-35 minutes or until toothpick inserted in center comes out clean. Do not over bake.
  8. Cool in pan before adding topping or frosting. Serve warm or at room temperature. For Bundt pan, bake at 350 degrees for 45-55 minutes or until toothpick inserted in thickest part of cake comes out clean. Let cake cool in pan cool for 10-15 minutes and then remove cake onto wire rack to finish cooling.
  9. FROSTING: Sprinkle with powered sugar or make a glaze. I use vanilla, cream cheese or butter cream frosting melted in the mircowave for a minute so I can drizzle it on top, but you can use whatever you like.
  10. NOTE: Hershey's makes a sugar free chocolate chip for those who want to reduce sugar.
  11. VARIATIONS: Use Hershey's cinnamon, butterscotch or dark chocolate chips.
  12. CUPCAKES: Makes 24. Bake for 15 to 18 minutes.
  13. Optional Filling: Pour half the batter into the pan. Drizzle mixture of cinnamon and melted butter on batter. Swirl with knife to make a marble effect. Cover with remaining batter and bake. Note that the cinnamon will make the cake dryer so keep more frosting on hand. Photo by Favored1

      @Dressage Husband: I'm not just a Hershey fan when it comes to chocolate. This is just a great recipe, but I do love others. I grew up near Hershey so I have been blessed to be a part of the company's growth. However, Godiva, Lindt and Cadbery are also favorites of mine. I've never heard of Suchard chocolate. When I was in England I was able to see the Cadbury plant. What fun. I'm sure you can use any chocolate with this recipe and you'll love it just as well. Let me know how it turns out.

      You've made this a Hershey's chocolate experience with history, fun and yum! I don't have mush of a sweet tooth but your Hershey's chocolate chip apple sauce spice cake would be a welcome treat with morning coffee or afternoon tea for sure, deliciously done!

      Personally I am not a Hersheys fan at all, I much prefer Cadbury's chocolate of the mass producers, but Lindt an Suchard make excellent chocolate too. I especially like the Belgian chocolates.

      That said I think that the recipe is one I will have to try, I will just substitute one of my preferred chocolates for the Hersheys. Well written and tempting lens though.
