How to Make Easy Pumpkin Bread

Pumpkin Bread

Pumpkin bread is a moist quick bread made with pumpkins. You can use fresh pumpkins or canned pumpkin. Even though it's great any time of the year, pumpkin bread will be a beautiful addition to your Thanksgiving feast. It's sure to be a hit over the holidays!

Pumpkin Bread Made with Fresh Pumpkins

it's a delicious recipe!

This pumpkin bread tastes great after dinner with coffee. If you have a fresh pumpkin or a left over jack-o-lantern that hasn't gotten moldy, the perfect thing to make is pumpkin bread!

Ingredients:

1 small to medium pumpkin

4 eggs

1 cup vegetable oil

2/3 cup water

3 cups white sugar

3 1/2 cups all-purpose flour

2 teaspoons baking soda

1 1/2 teaspoons salt

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon ground ginger

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 bread pans.

2. Cut your pumpkin in half and scoop out the seeds inside. You can save them and make them into roasted pumpkin seeds. Cut your pumpkin into big chunks, and place them into a microwave safe container. You should have a little water in the bottom so that the pumpkin doesn't dry out. Cover with plastic wrap, and heat in the microwave for 15 minutes or until your pumpkin is soft. Let the pumpkin cool, and then scrape the insides out into a bowl. Throw away the skin. Mash up your pumpkin, and make it into pumpkin puree.

3. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.

In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

4. Bake for about 50-70 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

You can add whatever you want! Raisins, cranberries, walnuts...the ideas are limitless!

Banana Pumpkin Bread

Ingredients:

2 ripe bananas, mashed

2 eggs

1/3 cup vegetable oil

1 1/3 cups canned pumpkin puree

1/2 cup honey

1/2 cup white sugar

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons pumpkin pie spice

1 teaspoon ground cinnamon

3/4 cup raisins (optional)

1/2 cup walnut pieces (optional)

Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan.

In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan.

Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before moving to a wire rack to cool completely.

Delicious Pumpkin Bread

Here's another recipe for a delicious pumpkin bread!

Ingredients:

3 1/4 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon ground nutmeg

2 cups solid pack pumpkin puree

1 cup vegetable oil

1/2 cup chopped walnuts (optional)

1 1/2 teaspoons salt

1 teaspoon ground cinnamon

3 cups white sugar

2/3 cup water

4 eggs

Directions:

Grease and flour three 7 x 3 inch pans. Preheat oven to 350 degrees F (175 degrees C).

Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, salad oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans.

Bake for approximately 1 hour.

      I had made a pumpkin pie from scratch. I was going to make banana bread next...

      I had had bananas already smushed up and thought, what the heck? I put them in with the left over pumpkin pie mix. I experimented. That was yesterday.

      Today I am looking for the recipe for pumpkin bread as I have A LOT of left over pumpkin puree. And what do you know? My "experiment" is already a recipe! Pumpkin banana bread. hehe too funny

      I would imagine that this recipe could be substituted with xylitol instead of sugar for a sugar free dessert. Very yummy! Nice job!

      Didn't know that you can make bread out of pumpkin. I think I'll try to make it when pumpkin season comes. I prefer fresh.

      Made pumpkin bread with "real" pumpkin. It was so easy! And much better than the canned pumpkin. The bread came out moist and delicious. I will make it again but will try adding some nuts next time.

      This weekend my family and I made pumpkin bread. It took longer than expected, about 70 minutes, but it came out soft, tender, and delightful! It's the perfect after dinner bread to enjoy with coffee.
