Taken on my deck
Fresh Baby Greens with Chicken, Mango, Yellow Bell Pepper, and Goat Cheese
Prep: 10 minutes (salad), 10 minutes (dressing)
Salad:
4 cups spring greens
1 yellow bell pepper, chopped
1 cup grape tomatoes, cut in half
1/2 cup shredded carrots
2 to 3 green onion springs, sliced
1 cup chopped mangos
2 baked, roasted, or fried chicken breasts,
cut into bite-size pieces
1 small avocado,
chopped and sprinkled with lime juice
Dressing:
1/4 cup olive oil
Juice of 1 1/2 limes
1 tablespoon wine vinegar (red or white)
Fresh basil, chopped
1 tablespoon Thai Chili Garlic Sauce
(gourmet food market)
Goat cheese, crumbled
InstructionsTo prepare salad, lightly toss together first
6 ingredients, except chopped avocado, in a large
salad bowl. Add chicken pieces and gently mix.
To prepare dressing, combine all ingredients,
except goat cheese, in a small jar. Shake to
mix thoroughly. Pour dressing over vegetables and
toss thoroughly. Add chopped avocado. To serve,
ladle onto individual salad plates and top with
crumbled goat cheese.
Yield: 4 servings.
