Peanut Butter Cookies

Updated on June 10, 2016

Quick & Easy

The peanut butter cookie has to be in the top ten in terms of popularity for "favorite cookie". I know it is one of mine and it is definitely one of the husband's.

If you love peanut butter cookies, then you have come to the right place.

Get your cookie sheets out and warm up the oven!

Cook Time

Prep Time: 30 minutes

Total Time: Baking time varies.

Serves: Makes 3 dozen.

  • 1 cup peanut butter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 cup margarine
  • 1 egg
  • 1 cup flour

  1. Measure ingredients into a bowl and mix thoroughly with blender. Will be thick.
  2. Measure out rounded teaspoons and roll into balls as you go along. Lay out balls onto cookie sheet lined with parchment paper. Press into a flat cookie with a fork by making a criss cross on top of each ball.
  3. Bake 6 to 8 minutes (depending on your oven temperature and how crunchy you like your cookies) at 325 degrees F (150 C).
  4. Let cool on pan for 40 to 60 seconds then move to cooking rack.
  5. Makes approximately 3 dozen cookies that are good both warm and cold.

The Tools for a Good Cookie

Producing a good peanut butter cookie has less to do with accurate measuring and more to do with what you are using to bake with.

If you use crappy peanut butter you are going to get a crappy cookie. I prefer to use Kraft Crunchy Peanut Butter for cookie baking.

Parchment Paper is a must! I never used it for decades and now I swear by it. Especially with an oven that has a mind of its own. Parchment paper prevents the bottom from cooking (or overcooking) before the top has time to catch up. It is a miracle. Seriously, try it.

Roll those sleeves up and get sticky. Then roll that mixture into cute little balls. Rolling each cookie by hand guarantees your ingredients are completely mixed. And it just makes a prettier cookie.

@paulgrossman: Gee the girl scouts down there always offer something special. I only ever see the mint ones up here. :( It's hard to go wrong with peanut butter, even if it doesn't work it usually tastes good. LOL

Two words always pull me in like a magnet...PEANUT BUTTER! It is so good...I've probably tried every peanut butter variation out there...cakes, yogurt pies, cheesecake...You name it! And when it's girl scout cookie season, I'm all over those Tagalongs! I will try your recipe....Of course with the criss-cross! :) Thank you for the yummy lens!

@danielmccarthy lm: Egad! In the mean time pick up an inexpensive toaster oven. They are good for everything these days. I have baked pork chops and muffins in ours. Great for the summer when it gets hot. :D Hope you get a real oven soon.

I can't wait until I get an oven again! We bought a house with no oven and it's driving me mad. I would use extra crunchy peanut butter in these. Chocolate frosting would go well too I guess.

Peanut butter cookies are my all time favorite! The only thing I don't like about this lens is the craving for peanut butter cookies that it has just caused. Yes, I'm blaming this lens for that. ;)

@Steve Dizmon: Actually, I don't think it is all that odd because I don't like chocolate chips in mine either but Reeses cups are the exception.

Peanut Butter cookies are my second favorite with Chocolate Chip being my first choice. Oddly enough, even though I love Reeses RB Cups I don't like PB cookies with chocolate chips. ???????????

@CCGAL: I definitely don't have that problem at our house. The husband polishes them off in a few days. And of course, true to form, doesn't gain an ounce.

I just made this recipe, with butter instead of margarine, and they are exactly what a peanut butter cookie should be - especially when taken out at 7 minutes and allowed to sit on the pan for a minute. Light, fluffy, and very peanuty.
