Red Velvet Cupcakes and a Tiny Fairy
Tiny Fairies Love Cupcakes!
Chocolate is key for me in any dessert.. so red velvet, which is a glorified chocolate is over the top and a hit with me. I adore cupcakes and all the fairies that I know have told me that they do too!
My husband is one of those people who cannot keep the weight "on". I know, I know, you wish you had that problem! Me too!!
Lately my husband has been craving red velvet cake and so what can I do? If I don't make one for him myself I buy it at the local Ralph's grocery store. Cheesecake is another frequent buy. I think the trick is with red velvet cakes is to not make them taste like chemicals or red food coloring. Sometimes that can be too much.
Below i have a great recipe.. try it!
Update.. on to cookies and Cheesecake Factory cheesecakes too! Ohh those sweets keep calling my name. Sweet fairies with a sweet tooth I would say. Tee hee.

TURN ON THE MUSIC As You Enjoy Some Cupcake Fun

Serves: 24, BUT Maybe just ONE if U R a piggie! tee hee
Ingredients
- 2 1/2 C all-purpose flour
- 1 1/2 C sugar
- 1 teaspoon baking soda
- 1 tsp salt
- 3 tsp cocoa powder
- 1 1/2 C vegetable oil
- 1 C buttermilk at room temperature
- 2 lg eggs at room temperature
- 2 Tbl red food coloring
- 1 tsp white distilled vinegar
- 1 tsp vanilla
- 1 pound cream cheese
- softened (frosting)
- 1 C butter
- softened (frosting)
- 1 tsp vanilla (frosting)
- 4 cups sifted confectioners' sugar (frosting)
Instructions
- Red Velvet cupcakes are luscious depending upon the recipe you use. Here within this lens I have hunted down a few and considered their reviews. All has been blessed by my own personal fairy Lily.
- DIRECTIONS:
- Preheat the oven to 350 degrees Line muffin pans with cupcake papers.. I like the foiled ones.
- In mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In another bowl carefully beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with electric mixer. Nest add the dry ingredients to the wet and mix until smooth.
- Fill cupcake liners about 2/3 filled. Bake in oven for about 20 to 22 minutes. Use toothpick to test them to see if they are done. Cool before frosting.
- Luscious Cream Cheese Frosting:
- In mixing bowl, beat the cream cheese, butter & vanilla until smooth. Add the sugar and on low speed until all is moist then speed it up and beat till it if fluffy.

I am blessed to know dear little fairy names Lily. She and I have shared many a red velvet cupcake and exotic teas. We write poetry together and here I share one:
"Fairies Along the Way - I Wanted to Capture Them and Make Them Mine"
Fairies along the way
I heard their trembling
beautiful goddesses.
I spied those angelic beings
whimsical angel drawings
within a flower formed from music.
I wanted to capture them
embrace their souls
make them mine.
So I slipped into their light
late at night
when I hoped they would be sleeping.
There within a petal
in an art fantasy space
alas
I awakened a tender soul
gentle despite my intrusion.
"I WANT' you!
I want you because I need magic
and because you feel things deeply
that you will explain... please."
Lovely little star of mine
stood as tall as she could
rubbing her eyes
leaning in with her ears
and whispered with the scent of a white orchid,
"I may not be all you think
I make mistakes.
I am guessing
yes I think
there is a difference between you and me
it does not include our size
our wings or lack of them
it is that one holds out for hope
one forgives her steps
one of us is human
and it is not you."

Goddess of Spring
she climbed to the tips of my fingers
and began to sing.
"I won't apologize for getting off centered at times
feeling too much
crying
laughing too loud
worrying
holding things in jars for later reflection.
I won't apologize for weeping
tears that come from nowhere
seemingly to you.
I treasure
the side of those emotions
that say no
and entangle me with objections.
Never say
don't feel so much
or to be comfortable with the dull
days
without edges
Zelda would be sleeping
and never have painted ever.
To cry is also to smile later
and to embrace a fairy of the night."
Since my angelic angel
my creature of the largest measure
lept from my hand
on to The Silver Strand
I have since concluded
emotions
storms that befall me
despite their turbulence
have never felt softer.
