Soft Corn Tortilla Tacos
1 lb ground beef or ground turkey
12 corn tortillas
Cooking oil
Salt
Pepper
Toppings:
Shredded lettuce
Diced tomatoes
Sharp cheddar cheese (hand-grated for best flavor)
Diced onions (green or white)
Freshly sliced jalapeños as desired
- Coat skillet with cooking spray.
- Break apart meat and place in skillet.
- Salt and pepper to taste.
- Cook on medium heat until meat is brown.
- Drain excess grease and set meat aside.
- In a second skillet, add two tablespoons of cooking oil.
- Heat oil on medium heat. Do not leave unattended! Oil can overheat and catch fire!
- Place a paper towel on plate and set aside.
- Place one corn tortilla in heated grease.
- Cook 30 seconds and using a fork or tongs, carefully flip tortilla to other side. Cook another 30 seconds, remove from skillet and place on paper-toweled plate.
- Tortilla will be soft and easily folded. Repeat with remaining tortillas.
Now prepare your tacos!
Spoon two tablespoons of meat into the tortilla. Add toppings and enjoy!
