Zesty Homemade Macaroni & Cheese

Updated on May 30, 2014

A Tired Old Recipe Made New Again

Have you ever had a recipe that you've liked for years go tired and stale? We had that happen wtih our Homemade Macaroni & Cheese recipe. We used to eat it all the time and just got sick of it. It had lost its magic!

So we began searching for other from scratch recipes and found another one we liked featured on the web page of our favorite salsa. We tried that one, but it wasn't quite what we were looking for either.

Inspiration struck! Like peanut butter and chocolate... Like ice cream and apple pie... Like fish and chips... Our old recipe and the new recipe came together for a deliciously magical cheese and salsa experience. I'm going to share that experience with you and hope you enjoy the magic too!

Ingredients

  • 1 can fat-free evaporated milk
  • 2 beaten eggs
  • 1/2 pound cooked macaroni
  • 2 cups shredded cheddar cheese (we like sharp cheddar)
  • 6 ounces shredded Fontina cheese
  • 1 cup Scotty's Fire Salsa (or your favorite brand of medium heat salsa)
  • 1 cup fresh breadcrumbs
  • 2 Tablespoons melted butter
  • 2 Tablespoons shredded cheese of your choice

Instructions

  1. Mix breadcrumbs, butter, and 2 T. shredded cheese for a crusty topping and set aside. (Note: We don't actually make the breadcrumb crust, which lightens it up a bit, but I'm including the instructions here for those who prefer a crust on their Macaroni & Cheese.)
  2. Preheat the oven to 350 degrees. While your noodles are cooking, combine evaporated milk, beaten eggs, both kinds of shredded cheese, and salsa in a large bowl. Drain water from noodles, then stir them into the mixture until they're coated.
  3. Pour the entire concoction into a casserole dish (or a 9x13" pan). Bake, uncovered, for 30-35 minutes, until creamy. If adding the crumb crust, add it now and bake a few more minutes until the crust is a golden brown.

Pyrex Smart Essentials 8-Piece Mixing Bowl Set

The 4-quart mixing bowl works perfectly for this dish. We love the whole set so much we use at least one - if not more - piece almost every day. Each bowl has a matching lid, and I highly recommend this set for every kitchen.

CorningWare 2-1/2-Quart Oval Casserole Dish with Glass Lid

The 2-1/2-quart oval casserole is just the right size for this and many hot dishes. My favorite part about it? It's easy to clean up, and if you've ever washed a dish with cheese baked on at the edges, you know easy clean-up is important. Comes with glass lid for baking and a plastic lid for storage. This casserole is a must have!

Old-fashioned though it may be, we love our "old school" cheese grater. It's quick, easy, and cleans up in a snap!

Scotty's Fire Salsa

The Best Salsa We've Ever Had

We first discovered this salsa by chance when we were at our favorite vacation spot, Hayward, Wisconsin. We needed fresh produce for a gathering and happened across Scotty's Fire Salsa in the produce section of the grocery store.

Intrigued, we picked up a container of it to try and we have been going back at every opportunity to buy containers 3-4 at a time. And because Scotty's Fire Salsa is so fresh and natural, we eat it fast and share it with friends and enjoy every last drop!

Big News: Scotty's Fire Salsa is now available at all Kwik Trip locations! If you have a Kwik Trip in your area, go buy some salsa and chips now. You'll be glad you did!

Large Batch Kitchen Tools

The kitchen tools I recommended above are fine for family meals, but if you're feeding a lot of people, you'll need to get more serious about kitchen implements. Here are my suggestions:

Hamilton Beach 7 Quart Stay Or Go Slow Cooker
Hamilton Beach 7 Quart Stay Or Go Slow Cooker

With a little extra space and a strong secure latch, this is the best crock pot for large batch stay or go cooking. I recommend this slow cooker and so do the 68 customers on Amazon who reviewed it for an average of 4.8 out of 5 stars.

Cuisinart DFP-3 Handy Prep 3-Cup Food Processor
Cuisinart DFP-3 Handy Prep 3-Cup Food Processor

You don't have to spend a lot of money anymore to get a decent food processor. Especially if you don't need it to have a large capacity. This 3-cup processor is perfect for making shredding lots of cheese for large batch cooking quick and easy. 4.4 out of 5 stars (182 customer reviews)
