A Tired Old Recipe Made New Again

Have you ever had a recipe that you've liked for years go tired and stale? We had that happen wtih our Homemade Macaroni & Cheese recipe. We used to eat it all the time and just got sick of it. It had lost its magic!

So we began searching for other from scratch recipes and found another one we liked featured on the web page of our favorite salsa. We tried that one, but it wasn't quite what we were looking for either.

Inspiration struck! Like peanut butter and chocolate... Like ice cream and apple pie... Like fish and chips... Our old recipe and the new recipe came together for a deliciously magical cheese and salsa experience. I'm going to share that experience with you and hope you enjoy the magic too!

Ingredients

  • 1 can fat-free evaporated milk
  • 2 beaten eggs
  • 1/2 pound cooked macaroni
  • 2 cups shredded cheddar cheese (we like sharp cheddar)
  • 6 ounces shredded Fontina cheese
  • 1 cup Scotty's Fire Salsa (or your favorite brand of medium heat salsa)
  • 1 cup fresh breadcrumbs
  • 2 Tablespoons melted butter
  • 2 Tablespoons shredded cheese of your choice

Instructions

  1. Mix breadcrumbs, butter, and 2 T. shredded cheese for a crusty topping and set aside. (Note: We don't actually make the breadcrumb crust, which lightens it up a bit, but I'm including the instructions here for those who prefer a crust on their Macaroni & Cheese.)
  2. Preheat the oven to 350 degrees. While your noodles are cooking, combine evaporated milk, beaten eggs, both kinds of shredded cheese, and salsa in a large bowl. Drain water from noodles, then stir them into the mixture until they're coated.
  3. Pour the entire concoction into a casserole dish (or a 9x13" pan). Bake, uncovered, for 30-35 minutes, until creamy. If adding the crumb crust, add it now and bake a few more minutes until the crust is a golden brown.
