Banana pancakes.
Lovely tasty starter for any dinner party or get together of family and friends.
Thick banana pancakes
INGREDIENTS
2 large ripe bananas
250g self raising flour.
150g sugar
3-4 large eggs
half teaspoon of vanilla extract
200ml semi skimmed milk.
METHOD
chop up bananas and put in large mixing bowl.
add other ingredients including beaten eggs.
beat mixture till thick ,but smooth texture.
COOKING
Heat frying pan till smoking hot.
add small amount of vegetable or olive oil.
use a soup ladle, and put full measure in to hot frying pan.
((always start of with hot pan,if pan is too cool, pancakes wil stick to pan.))
cook pancake on one side for one minute,leave alone for that full minute.
after minute is up, flip over pancake to other side.
cook for further minute,allowing it to cook without moving it about.
after minute is up, serve on large plate with jam or syrup.
also great with fresh vanilla ice cream.
