Some of the options that you can consider include walnuts, almonds, soy nuts, sunflower seeds, and lemon juice.

To make it even healthier, you can also mix it with fruits like apple, oranges, and strawberries, among others. As you pack your lunch, you can also prepare toasted bread (I love whole grain toasts!).

You can prepare quesadillas for lunch, less the meat. In this case, the first thing that you need to do is to melt cheese and have it poured on the tortillas. Add mushrooms and peppers and top it off with salsa.

If you are vegan, you can forget about the cheese and replace it instead with guacamole.

One food that is being missed a lot by vegetarians is burgers. Even if you are already a vegetarian, you can still enjoy burgers, but the ingredients will be altered in order to make it perfect for your diet.

Use a blender to process tofu. Once you notice that it is already creamy, set it aside for a moment. Put bell pepper, mushrooms, scallions, and corn in a pan and have it sauted for at least five minutes. Then add cumin and garlic and cook for another minute.

Once this is done, mix it with the processed tofu, potato, pepper, and salt. Add bread crumbs. Shape it into regular burger patties and make sure that the ingredients stick together. Refrigerate it for a while and fry it with the use of olive oil once you are ready to leave.

This is another vegetarian lunch that is a snap to prepare. If you are in a hurry, preparing this meal can be ideal as it will not require a long time.

Look for a flatbread, preferably one that is available in the supermarket. Make sure that the flatbread is perfect for vegetarians. Pour tomato sauce on the bread or any vegetarian sauce. Top it with the vegetables that you like. You can also add walnuts. If you eat cheese, apply such on the top for better taste and fuller flavor.
