Best Steak On An Iron Skillet!
Steak ,the Uruguayan way.
Uruguay style Barbecue.
Preferably porterhouse or t-bone
I hope you have a good extractor because there will be smoke.So here goes my recipe for a perfect steak dinner : you warm up a wrought iron skillet for about three minutes, cut a small piece of fat from the same steak rub the hot skillet with it and place your steak in it when the top side of the steak is warm to the touch with the back of your hand flip the steak over and add about a teaspoon of salt when there is a good amount of juice accumulated on the steak its ready.You can accompany this with french fries on top of which you put two fried eggs sunny side up so you can dip your fries in it along with a piece of steak,Russian salad,and lettuce and tomato salad,to which if you like yo can add a few thin slices of sweet yellow onion..You will also need a piece of either french or Italian bread to clean the plate .A glass of cabernet or tenant will wash it down pretty good.Please do not desecrate your steak by putting any kind of sauce on it.For the children I would use skirt steak, they find it easier, it's just as flavorful, and there's no waste.Russian salad:A traditional Uruguayan salad,I don't know why we call it Russian salad,you put to boil,diced carrots let boil for about five minutes add diced potatoes about one inch square double the number of potatoes than carrots,once it's tender strain with the pasta strainer, don't rinse, add a can of sweet peas, a generous amount of mayonnaise mix well and enjoy. Another Uruguayan favorite is the "Chivito", but it would be redundant to write this one for you since it's very accurately portrayed in the Anthony Bourdain video that is posted here with pretty much step by step description of ingredients and instructions on how it's made.
Other cuts great on the grill.
Another cut great on the grill is tri-tip also known as sirloin bottom or tip roast,which is best prepared with just salt and on the grill for about one and a half hour.
Porterhouse steak

Another steak recipe is what we call Portuguese steak or bikes a la Portuguesa ,for these steaks you chose a porterhouse or t-bone steak sear both sides on the skillet add a little salt and cover the steak with sliced onions and green and red bell peppers add ground black pepper and a little salt and cover skillet leaving a little gap so the excess liquid can evaporate so the peppers and onion cook but the excess liquid evaporates.This goes well with yellow rice. To make the yellow rice I like to use real saffron that comes in like little strings. So for four people I put about four tablespoons of oil in a four-quart aluminum pan and sautee two cups of rice by itself stirring for about 4 minutes, then I add 5 cups of water stir it and break up the strings of saffron with my thumb in the palm of my hand and add it , add two teaspoons stir well and then leave without touching until it's done, you know when it's done because the water completely evaporated and there are little holes like little craters in the rice going almost to the bottom of the pan.if you put two and a half cups of water for a cup of rice your rice will never overcook ,even if you leave it too long there will form a crust on the bottom and around but the rice will still be perfect.
