Keto and Me

My first week on Keto.

All of my adult life, I have become a yo-yo dieter! Every diet; I've tried it. From plain old counting calories, to curves, to weight watchers, nutrisystem, meal prepping, adkins, to herbalife. I've taken weight loss pills, and even starved myself. I lost weight along the way, only to gain it back over and over again. I've spent hours and lots of money on anything that promised to help me lose weight.

I had just fallen off the herbalife wagon, and I was gaining all of my weight back. When one night I had a dream. I had lost all of my weight, I was healthy and happy and it was all because of Keto.

Now, I have heard of Keto before. I have seen the many before and afters. While scrolling through instagram and watching people eat melted butter with hamburger and cheese on top of cheese. I wondered how all that fat could really be good for you? So before my dream, I never even thought of doing Keto.

I am a strong believer in dreams, so after my dream. I went online and learned everything there possible was to learn about Keto. By eating so little carbs (under 20g) and no sugar. You can put your body into ketosis, where your body burns fat for energy. I went to my local library and checked out about 15 books. I wrote a grocery list and decided to try it. What did I have to lose?

The first day was a Tuesday, I drank a large glass of water and then had a bullet proof coffee. (coffee, 1 TBS butter, 1 TBS coconut oil, 1 TBS heavy whipping cream, and a packet of stevia.) After I brewed it, I spun it through the blender, and it was an amazingly delicious latte. I was in love! The rest of the week along with my bullet proof coffee, I had eggs and bacon for breakfast, or just hard boiled eggs, or egg cheese omelet. My lunches consisted of tuna salad, chicken salad, or ham, pickle and cream cheese roll ups. My dinner was cheese burger (no bun) and a salad, chicken breast and asparagus (with Parmesan cheese and butter), zucchini noodles with spaghetti sauce, chicken thighs with riced cauliflower and green beans, salmon with mashed cauliflower. And left overs.

I felt fine! I didn't crave carbs. I didn't go through a keto flu. Although I did buy electrolytes powder packets and drank lots of water to help. I honestly felt like I was cheating. I haven't put butter on vegetables in years, nor have I used full fat cream. And I stayed away from cheese like it was the plague. But in this diet those foods were not "evil." I thrived, the first week. And fell in love with the keto diet. I joined every keto Facebook group I could find. I watched endless keto related you-tube videos. I ordered Keto strips to track when I was in ketosis. Within 4 days it was reading that I was in ketosis. I made a pintrest board just for keto. I wrote down every recipe that I wanted to try.
