How to make the best lasagna in the world.
First we will start with the dough, you are not going to use the regular pasta dough you will use what is specifically used for lasagna and cannelloni and here is the recipe for it: in a large bowl mix 6 eggs,1/2 qt milk,1/2 qt water,one stick melted butter ,one teaspoon of salt and two full cups of flour, mix well,you should end up with a mix similar to pancakes but more liquid.in a frying pan make with this mix thin pancakes , you will have to butter the pan often so the pancakes don't stick.if at any point the mix is too thick just add water.
The filling for the lasagna
For the Lasagna filling saute, three large onions ,half a head of garlic ,when it's almost done (it looks transparent)add Italian seasoning, mix and remove from fire,divide it into three equal parts and use one part to saute and cook about two lbs of ground beef 90% lean, once its cooked add some green and black olives, this will be your first layer, take the second part of the onions and saute about four packs of frozen chopped spinach, add to this once it's cooked chopped walnuts or pecan,this will be your second layer,your third layer will be about three cans of ready to eat mussels , I find the Spanish ones pretty good, your third layer will be regular cooked ham like the used for sandwiches sliced thin about three slices one on top of the other and a slice of provolone medium sliced on top of the ham.

If you don't like mussels or seafood at all or you are allergic you can substitute the layer of mussels for a layer of sautteed musshrooms or champignons of your choice.
We will make two sauces to top off the lasagna one white and one red, Bechamel sauce and pasta sauce. for the pasta sauce we will use the last of the three parts of the onions ,cut up very small one red chorizo and add a large(29oz) can of tomato sauce one teaspoonful of sugar, one teaspoon of salt , and one cup of water. simmer low for about one hour and it should be ready.For the Bechamel or white sauce, you will need two cups of milk,one teaspoon of the salt half teaspoon of ground black pepper one stick of butter and three tablespoons of flour, mix in a small pot and be continuously stirring until it thickens when it thickens it's ready.
Assembly and put in the oven.
So now we will put all this together and put in the oven.In a large baking pan ,(about 12 x 16 x 3) on the bottom spread the ground beef, cover with a layer of the pancakes ,next put the layer of the spinach, then a layer of pancakes, next put a layer of the mussels then a layer of pancakes, after that a layer of the ham and a layer of the cheese,next a layer of the pancakes, now cover with a layer of the pasta sauce , cover the pasta sauce with a layer of the white or bechamel sauce, and on top of all parmesan grated cheese.Put in the oven, at about 400 degrees for about 20 minutes or until the to[p starts to get a little color. remove ,let sit for a few minutes and enjoy the best lasagna you have ever eaten and take a bow when you get a standing O!
