Low Carb Mock Mashed Potatoes
This delicious dish can be served alone as a healthier version of mashed potatoes. Even my children love it. You can also use it to make other dishes which require mashed potatoes. I use this recipe for my son who is allergic to dairy as well as my husband and myself for a low carb heart healthy diet.

Ingredients
- 1 head cauliflower, chopped
- 1 onion, chopped fine
- 1 TBSP butter or olive oil
- 1/2 cup almond milk
- to taste salt
Low Carb Mock Mashed Potatoes
- Microwave chopped cauliflower in a container with a cover for ten minutes.
- Add onions and cook for five more minutes
- Add butter or oil and almond milk and cook 2 minutes
- Mix in blender for 20 seconds. Add salt to taste
