Low Carb Mock Mashed Potatoes

This delicious dish can be served alone as a healthier version of mashed potatoes. Even my children love it. You can also use it to make other dishes which require mashed potatoes. I use this recipe for my son who is allergic to dairy as well as my husband and myself for a low carb heart healthy diet.

Yields: feeds 3 or 4 people

Ingredients

  • 1 head cauliflower, chopped
  • 1 onion, chopped fine
  • 1 TBSP butter or olive oil
  • 1/2 cup almond milk
  • to taste salt

Low Carb Mock Mashed Potatoes

  1. Microwave chopped cauliflower in a container with a cover for ten minutes.
  2. Add onions and cook for five more minutes
  3. Add butter or oil and almond milk and cook 2 minutes
  4. Mix in blender for 20 seconds. Add salt to taste
