Great Green Beans for Thanksgiving

Great beans are not easily made. You will have to break with some of your traditional ideas about cooking green beans but it is well worth it. I only make this dish for holidays. My family could not get me to cook with bacon grease any other time but the Holidays. So be prepared this isn't your Mother's green bean recipe.


Green beans snapped and cleaned.

10 strips of bacon and the reserved grease

1/2 cup of sugar

1-2 large diced spanish onion

20-30 pepper corns

Before cooking reserve bacon grease about a cup's worth other wise known as lard. Don't buy the lard. Get it from the bacon grease.

Snap the ends off your green beans and wash the thoroughly.

Through them in about and pour a pot and pour water until it just goes over the top. Add in your bacon grease and cook to a boil. Once bioling turn down to a simmer and add pepper corns about 20-30 depending on how much you life pepper. Add a diced onion and believe it or not about a 1/2 cup of sugar. Cook on low simmer for about 30 minutes or until tender.

Serve with broken bacon over the top of the beans.
