Holiday Cakes

Mayonnaise Cake


2 cups of flour

1 teaspoon baking powder

1 cup Real Mayonnaise {without lemon}

1 cup sugar

1 teaspoon vanilla

3 tablespoons of Hersheys cocoa

1 teaspoon baking soda

1 cup water

Sift all dry ingredients together in a mixing bowl, now stir in mayonnaise

add water and mix on medium for 2 minutes {if hand mixing about 200 strokes}

Grase and flourĀ  8x11 cake pan {I prefer to use oven joy it geases and flours with just a spray}

Pour batter into cake pan and bake at 350 degrees

Bake for 35-40 minutes {some oven temperatures vary so you might test for doneness at 30 minutes.

Insert a toothpick in center of cake if it comes out clean cake is done.{cool cake and frost}

Icing Ingredients:

1 1/2 cups of powder sugar

1 tablespoon of soft butter

1 teaspoon of vanilla

3 tablespoons of cocoa


add all dry ingredients then the butter,vanilla and milk. I did not put a measurement on milk because you have to make it to the consistancy you prefer. Add small amounts until you get the consistancy you like.

Set aside until cake is cooled and then frost.

      I thought I was the only one to use mayonniase and salad dressings in sweet. I will have to try this out, thanks for sharing. creativeone59

      I hope you enjoy it. I think it's so tasty with the mayonnaise and it's light and airy. Now if i could just find a way to be light and airy by eating this cake. hahaha. But seriously I will be putting alot of recipes in for sweets now because of the holidays so maybe you can use some of them. If you do let me know if you liked them. Thank you for your time.       i have heard several times now about putting mayonnaise in cakes - i guess i will have to try it! the holidays are the only time i do any serious baking, and the only time i enjoy it :)
