I suspect because bunnies are known to be very fertile.
Spring is suppose to be the time of year for "new birth".
The "Easter Bunny" is more about the Spring season and not the religious Easter holiday just like Santa Claus has nothing to do with the birth of Christ celebrated on Christmas.
