Making Pasta Easter Egg Nests

Ribbons of fresh pasta are traditionally sold already twisted into portion sized nests so all that needs to be added is a trio of eggs.

Position the eggs while the fresh pasta is still soft; once it is dry, it will hold the eggs in place.

Delicatessens and gourmet stores offer standard buttermilk colored egg noodles, as well as variously colored fresh pastas that are sometimes more difficult to find.

Black pasta is tinted with cuttlefish ink; the red with beets, and the green with spinach.

If you cannot buy any of the colorful varieties, you can still achieve a festive look with the eggs.

Food colorings offer a choice of safe to eat shades which can be used for a subtle or vivid effect, depending on how long you leave the eggs in the dyes.

Using food coloring, add it to the egg noodles until the desired color is achieved. Then wrap and shape the wet noodles into the desired nest shape and let dry slightly.

Before the noodles are completely dry place the dyed eggs in the center of the nest and then let the noodles finish drying.
