Texas Bar-B-Que

Chicken, sausage, or beef and a rack of ribs too

It’s all your choice with Texas Bar-B-Que

Cooked over fires of slow-burning mesquite wood

It gives it great flavor and it is oh so good

 

The chicken absorbs all of that great wood smoke

It slices up tender and juicy; that’s no joke

And the sausage, oh it’s something to savor

Just drippin’ with juice and loaded with flavor

 

The beef brisket comes either sliced or chopped

While it is cooking with spice it is mopped

Slice it thin and lay on some sauce thick

Chop and pile on a bun, that’ll do the trick

 

Mister, with those ribs you can never go wrong

Their flavorful and tender just fallin’ off the bone

Suck up the flavor and lick every finger

There’s lots more ribs to eat so let’s not linger

 

 

Dill pickles, peppers, onions are included in the fare

Brother you’ve missed it if you haven’t been there

Oh and those vinegar sauces with which you can baste

They really enhance the meat and bring out the taste

 

A combo plate is the best with all the meats in sample

Baste on the sauce; the mix of flavors will be ample

Throw in some hot rolls or a few pieces of loaf bread

And brother you get ready, you’re about to get fed!

 

Put some honey on those rolls; got it goin’ now, Hoss

Get a big ol’ bite of brisket and dip it in the sauce

A spoon full of pinto beans and homemade cole-slaw

Anything this good might just be against the law

 

Texas has got one of everything and some stuff we got two

But there ain’t much that’s here better than ol’ barbeque

So don’t go through Texas without doing what you should

Buy some Texas Barbeque, and tell everyone, it’s good!

      Oh man! Tasty hub! Love the YouTube documentary too. I'm actually at a cook-off today! (Just taking a break because I am reeking of smoke!) Besides the regular beef fare, they're cooking up whole pig, lamb, and goat too. Not too pretty on the pit/rotisserie . . . but delicious I am sure.

      @lalesu...you are ever the Girl Scout, girl! LOL! Not only got your BBQ but brought your own sauce. Nothing like a woman who knows what she likes and where! LOL! I had already used that word "Hoss" before we talked so it was a coincidence! But I am glad it is a "Hoss Daddy". WB

      Wayne, looks like I'm the only one so far satisfying that unique craving...just finished off some delicious BBQ pork topped with my favorite sauce that I toted all the way from Starnes BBQ in Paducah, KY ~ Yu-umm!

      I love that you used the word "Hoss"...I laughed out loud when I read it...This is one Hoss Daddy poem, Wayne Brown! ~ Laura

      Dang dude, I just ate a small lunch and now you have me freakin' starving! Not sure whether to thank you or curse at you. Good BBQ is few and far between up here. It IS available, but not right around the corner like it was when I lived in Tejas.

      Mmmmm! Our favourite in South Africa! Even do it with fish. We call it ‘braaivleis’. We often invite guests for a ‘braai’. Sometimes we organise a ‘bring and braai’ - all invited guests will then bring their own meat and drinks - the host will provide the fire, salads and ‘pap’. The latter is a delicious starch made of maize meal and served with gravy (tomatoes, onions, green pepper, mushrooms, and some optional ingredients). Delicious! I am, in fact, going to enjoy one this very afternoon. Thanks for given me a roaring appetite.

      @saddlerider1...Ken, I had a friend one time tell me that if someone put a plate of Texas ribs on top of his head that his tongue would beat his brains out trying to get to them! LOL! Now that's good, Son! Thanks for the good words....and, enjoy your ribs! WB

      Pardner, you have my lips a smackin and my tongues sticking out and watering, dam those BBQ ribs I can taste them from where I sit. I have tried BBQ ribs in many states I've driven through in the past years and there is no better BBQ rib than in your Lone Star state, yup siree Texas steak and BBQ is mouth watering delicious. Now I have to go out for some at my local grill, we happen to have one place here in my city that has the best ribs in town. They marinate them in Burbon and man are they great tasting. My lips are just a smacking Wayne, another tasty morsel hub. You got my meat falling right off my bone. LOL

      I know where I went wrong, Wayne. I shouldn't have read your hub before dinner. Now I'm starving and can't think of anything but a luscious barbecue meal of ribs falling off the bone slathered with spicy, tangy barbecue sauce.

      Your poetry is just too dang realistic.

      Wayne-I am soo hungry now for some good ole bbq. I might have to go to Famous Dave's or Market BBQ here in Minnesota for dinner. I loved your awesome poem about bbq and really enjoyed the fun video too.
