We have all heard that old saying. In cooking, that saying is definitely true!
Spices not only entice the tongue to taste unknown dishes but also tickles the nose with promises of things to come.
More than that, they help us remember some of the most precious memories we had tucked away in our brains. The flavor and smell of freshly baked bread or of a hot apple pie that is rich with spices can make a bad day a thing of the past. Homemade ice cream rich with vanilla or chocolate cannot be eaten by store bought.
Spices add fullness and richness to our foods and our lives so store them well on good racks.

Counter-top Racks - Given Enough Space
The glass bottles that contain spices are great for holding the freshness in but they take up a huge amount of space if you use a large variety of spices. At one time, part of my counter top looked very much like this picture.
The counter around the stove had the spices that I used in dishes that were cooked on the stove top.The spices that were used in baking were kept over by the appliance garage so every one would be handy where and when they were needed.
It really started to get ridiculous - the counters were filled with spice racks and there was not enough room to cook.
So, something had to change; starting with my attitude of wanting everything at my finger tips, all the time. I learned that counter space was in fact, very dear and needed to be allocated as such.Therefore, I started converting drawer space to spice space - in jars so I can find which spice I looking for very quickly.
Spice Drawer
Don't you love to see the colors that all the different spices have. Sometimes the color is indicative of the flavor - but most of the time it is not. Look at cinnamon - beautiful dark brown but the flavor by itself is bitter. Combine this with other spices or sugar and you have something quite special. I like to use cinnamon with ginger in eggs for breakfast - great flavor and good for you!
By keeping your spices in airtight containers, you keep your spices fresh and you can spot the one you are looking for quickly. This picture is of a drawer that was filled will plastic sealed boxes laid side-by-side. If you have a large drawer that you are willing to dedicate to spices, this could be just the thing for you.
Vertical Spice Drawer
This was another addition that we made in the kitchen. This sliding pantry can hold a large number of bottles or cans of spices.
By putting the most used spices at the top racks, you save your back from too much bending. Retrieving your spices should not be a chore but a pleasure.
This type of cabinet can fit in many different places and can be a counter height or a full height cabinet. The fact that they can be closed and out of the way really is very neat.
One of My Favorite Spice Wall Pictures
I love the idea of taking a plain meal and adding spices that I choose from the beautifully colored wall to add favor and excitement to the meal. By excitement, I do not mean flavors so hot that one's tongue burns for hours afterward; but in stead, I mean flavors that make the tongue dance with pleasure.
The picture of the wall above shows a pantry that has been filled with care and love - shelves holds flavors from far away lands where one must travel into the jungle to gather the spices for the daily meals or just out into your own garden.

Many of the spices that I buy are in one pound bags and often they come two bags per sale.If you are interested visit the bulk spice store above. So if you cannot use all of the spice, find a friend or a soup kitchen that can use the spice. I have found that you get one pound for basically the same price as a bottle that contains less than two oz at the store.
