Easy "Ice Cream" Sandwiches
Are you looking for an easy, yet relatively healthy summertime dessert? The "diet" frozen treats in the supermarket freezer case can get pretty pricey, but I've been making this recipe for several years and you can certainly tweak it so that it comes out as a low-fat, low-calorie treat.
"Ice Cream" Sandwiches
1 package (3.4 oz) instant vanilla pudding mix
2 cups cold milk
2 cups whipped topping
1 cup miniature chocolate chips
48 graham cracker squares
Mix pudding and milk according to package directions and refrigerate until set. Fold in whipped topping and chocolate chips. Place 24 graham crackers on a baking sheet; top each with about 3 Tbsp. filling. Place another graham cracker on top. Freeze for 1 hour or until firm. Wrap individually in plastic wrap. Store in freezer bag.
How can you make this recipe healthier? Simply use skim milk, sugar-free pudding, and fat-free or low-fat whipped topping. I've tried making this with several different combinations of those ingredients and I've gotten great results every time. Also, switch around the pudding flavors! There are so many great ones out there; try using chocolate, lemon, pistachio, or cheesecake instead of vanilla. Now there are also strawberry, chocolate, and vanilla flavored whipped toppings, too. Think of the fun flavor combinations! Maybe use lemon pudding, strawberry whipped topping, and white chocolate chips. Or chocolate pudding, chocolate whipped topping, and Heath bar bits for a praline frozen sandwich. It's also a good one to make with kids!
