Egg and Bacon Pie

Eggs have many uses, not only are they part of many recipes, but egg dishes also offer some great variations. One can tire of scrambled eggs or omelettes, but the following give a few useful and tasty extra ways to enjoy eggs.

These are great as a main meal, or as a cold snack

Egg and Bacon Pie

¾ cup self raiding flour

1 ½ cups milk

4 eggs

1 cup grated cheese

3 tablespoons fried crisp bacon

Seasoning, carrots, peas, mixed vegetables (optional)

Beat the butter, flour, and milk together with the eggs. Add the grated cheese and the bacon, and if you wish, seasonings, and grated carrots, peas, act. Put the mixture into an oven proof dish and cook in the oven at 350F (180C) for 30 minutes.

2 tablespoons olive oil

1 diced onion

2 small cooked and diced potatoes

1 small sliced tomato

1 slice, diced ham

1 tablespoon fresh herbs (oregano, sweet basil)

Salt and pepper to taste

Melt half the butter and olive oil together in a large skillet. Add the onion and cook until soft over low heat. Add the potatoes and coat with olive oil and butter. Stir in the herbs, ham and the tomato. Beat the eggs in a bowl and pour into the pan. Add salt and pepper to taste. Cook only until the bottom is firm. This is so cheap and easy to make, and ideal for students and people staying on their own. I am also a 'vegetarian' but I eat eggs and dairy products.

Just as well I've already had breakfast. I'm primarily vegetarian and it's not because I don't like meat. My body doesn't like it much. But I really like bacon and egg dishes, they are so tasty. Great recipes, thanks.
