Will I get credit for a purchase made through amazon when the item is not featured in the ad on my hub? In other words, if someone clicks on the ad, then makes a purchase for a different product do I still get credit?

If a customer puts an item in their basket after clicking your link and then purchase it you should get commission for the sale. If the item was already in their cart you will not get credit for it. The affiliate links to amazon should also be good for anything they buy over the next 24 hours or until they click another persons affiliate link. That is how the affiliate program for Amazon works and as of now the amazon affiliate program is separate from HubPages payment program.
If HubPages ever incorporates amazon links like they do ebay I am not sure how this will be affected.
I've had people click through and buy $500 worth of t-shirts or other items I don't have listed on any of my hubs. So yes, the first sale created after they click through your link gives you commission for EVERYTHING they buy.
Most of my Amazon sales are items other than what I had advertised. As long as the customer arrives at Amazon through one of your ads, as well as placing an order for any number of items in their Shopping cart within a 24 hour window, you will (eventually) get commission for all those items. You should go to your Amazon Associates account and read the policies.
You won't be credited for the sale until the item(s) are shipped, and paid for in full. There is also a 60-day return policy (from the date of shipping), which needs to elapse before you get paid.

Yes definitely. People often click through from one of my hubs and don't buy what they clicked on but I still get paid for wahtever else they buy.
